Ingredients

Adjust Servings:
1 Bell Peppers
2 Spring Onions
2 Onions small onions
2 cups Watercress
2 cups Portobello Mushrooms
1/2 cup Toasted sesame oil
1 tsp Sesame seeds
1/2 cup Aquafaba
1 box Spelt pasta

Vegan Lo Mein

A quick and easy alkaline vegan take on a classic lo mein recipe.

    Steps

    Chop the veggies

    Chop up all the veggies and set them aside.

    Sauté the veggies

    Place your onions and bell peppers in a pan with some oil and sauté on a medium heat them until they caramelize. Once cooked down add in mushroom spring onions and watercress.

    Cook the noodles

    Prepare the spelt noodles according to the instructions on the box

    Add the noodles

    Add the noodles to the veggies. Add in a 1/2 cup of sesame oil and stir gently on a medium heat.

    Aquafaba

    Add in aquafaba if you have. If not leave it out

    Stir

    Continue to stir gently on a medium low heat until all ingredients are combined well. Finally serve and optionally top with sesame seeds.
